Oolong

Oolong literally means “black dragon”. The legend says, that once upon a time the fermentation process had to be left unfinished to fight against a black dragon, thus being born Oolong Tea.

It’s a semi-fermented tea with a special production process where the crucial moment is when the fermentation needs to be stopped. That moment is when the leafs present 30% red and 70% green.

With a lighter flavor than Green Tea (less bitter), and half the caffeine than Black Tea, Oolong is known as “the connoisseurs tea”:

Preparation

  1. Bring the water to a boil.
  2. Serve the suggested amount of tea and let is steep during the indicated time.
  3. Remove the herbs with a strainer and allow to settle for 2-3 minutes.
